i made pizza dough :D the last one i over-proofed by letting it sit for like 5 hours unrefrigerated in the heat (we don't have AC and it's so HOT here as we live on the uppermost floor) but i still liked it. kinda like weird pizza cake. i like putting brined artichokes and olives and capers and onions and tofu and dried tomatoes on it. the rest of the dough is still in the fridge. i usually let the dough proof for at least 2-3 days in the fridge but i did a week once and it was amazing. i tend to use too much yeast i think.

ratios:
  • 100 % flour (type 00 and/or 405)
  • 60-65 % water
  • 2 % salt
  • 0.5 - 1 % dry yeast
  • 1 % sugar
Then I mix that shit together and add more flour or water as kneaded (haha, get it?) and knead it a bit.
then let the covered dough rest at room temp for up to a day (or way less time if it's so hot), after which i put it into plastic containers or cling film and let it proof for up to 7 days in the fridge.

I also used dough with olive oil but I think I prefer without (olive oil makes the dough rise less i think). i tried using wholegrain flour which was tasty but not really pizza. had to use way more water.

for tomato sauce i just mix some tomato paste with water, olive oil and sometimes crazy stuff like habanero tabasco or garlic or onion powder or oregano.

Sometimes the pizza turns out really well, sometimes really weird :D i like that. annoying: the convection setting on this oven has started tripping the apartment's circuit breaker on the highest temperature (250 deg celsius) which is annoying :(

I am in the middle of what I like to call Cereal Purgatory. About once a year I purchase a box of cereal and a half gallon of milk at the same time. I don't really use milk for anything else, so when I run out of cereal before milk, I have to buy more cereal. If I run out of milk, but have cereal left, I have to buy more milk. I will keep doing this until I'm able to empty them both in a single bowl - then I will be free.
a week or so ago i decided to participate in Cereal Purgatory as well and it is quite a lot of fun. whenever i use milk (which is never), i prefer soy milk to dairy, so it has the upside of being more shelf-stable and not requiring me to drink the whole litre in a week. this is going to be a long purgatory
