Instant pots also make great rice cookers! Totally agree about kitchen gadgets too. And knives -- sharp is better than fancy. I've got a Dexter from a restaurant supply store that's just a workhorse and cost $20.

Honestly frozen veg -- for most veg, esp. hard veg -- is just as good as fresh. I don't like frozen peppers or summer squash really, but then i don't love squash anyway. Canned beans are good, and approx. 1000000x easier than dried IMO, and I read somewhere that canned tomatoes are actually more healthy when canned.

i am too a sucker for anything that makes things faster. so we use a lot of frozen veg, and they’re great for so much! lot of rice cooker meals too, those took a bit to figure out but so nice to just come home to a pot full of rice, protein, and veggies ready to consume

we had some bagged cabbage/carrot shreds (coleslaw mix) lying around so i mixed it with kewpie mayo (4tb), dijon (1tb), apple cider vinegar (1tb), a splash of mirin, and a dusting of mirin/black pepper. it's great, highly recommended.

Love to slap together a quick slaw. Made one the other week with like 1/4 a head of cabbage, some mayo, some chili crisp, garlic powder salt and pepper A+A+A++++++A++

Good? Yes! I do find it a bit overhyped. However, I am a mayo enjoyer in general so it may be a bigger deal for those who are more discerning.
